I have a swimlane flow chart and would like any tips on displaying a process that can happen anytime. For example you send a customer an invoice and continue on with your tasks but somewhere down the line you get the payment for that invoice. What is a good way to display the customer sending the payment back which can happen at anytime ?

Its a different process triggered by the customer sending a payment in. You could have a higher level process that show the top level process and then show things like payment received as a sub process.
In BPMN you could show payment receipt as an intermediate event but it doesn't sound like you're using BPMN. Expect I'd go with the higher level process and subprocesses in BPMN as well.

Systems, particuarlly at higher levels of abstraction, are often not sequential. You can not model a non-sequential system using sequence based techiques such as BPMN and Activity Diagrams. That is a core fundamental tenant of data flow diagrams.
This is (especially within the BPMN community) one of those deep dark BA secrets that is only allowed to be whispered in seceret locations . So keep it quite.
